  • Cheese & Pastry: 1 sheet puff pastry, thawed, 200 g (7 oz) Brie cheese, rind on, sliced
  • Fruits & Garnish: 1/2 cup pomegranate seeds, 1/4 cup fresh parsley leaves, 1/4 cup fresh rosemary sprigs
  • Other: 1 egg, beaten (for egg wash), 1 tbsp honey, 1/4 cup chopped pecans or walnuts (optional), Freshly ground black pepper, to taste

Instructions

Step 1:
Preheat the oven to 200°C (400°F). Line a large baking sheet with parchment paper.
Step 2:
Unroll the puff pastry sheet. Using a sharp knife, cut a 20 cm (8-inch) circle, then cut a 10 cm (4-inch) circle in the center to create a wreath shape.
Step 3:
Arrange the Brie slices evenly around the wreath base, leaving a small border.
Step 4:
Sprinkle half the pomegranate seeds and all the chopped nuts (if using) over the cheese.
Step 5:
Fold the pastry edge over the filling, pinching gently to secure. Brush the pastry with beaten egg.
Step 6:
Bake for 15 minutes, or until the pastry is golden and puffed.
Step 7:
Remove from the oven. Drizzle with honey and season with black pepper.
Step 8:
Cool slightly. Garnish the wreath with parsley, rosemary sprigs, and the remaining pomegranate seeds.
Step 9:
Serve warm or at room temperature.
