# How-To Steps:

- Place the chopped dark chocolate in a heatproof bowl.
- In a small saucepan, warm the heavy cream until just simmering without boiling. Remove from heat and immediately pour over the chocolate. Allow to sit for 2 minutes.
- Add butter, peppermint extract, vanilla extract, and sea salt to the chocolate-cream mixture. Stir gently until completely smooth and glossy.
- Cover the bowl tightly with plastic wrap and refrigerate for 1 to 2 hours until the ganache is firm enough to scoop.
- Sift together matcha powder and powdered sugar onto a shallow plate or bowl.
- Using a melon baller or teaspoon, scoop and quickly roll 20 portions of ganache into balls to minimize melting.
- Roll each ganache ball in the matcha powder mixture until evenly coated. Optionally, drizzle with melted white chocolate or sprinkle with crushed peppermint candies for decoration.
- Place truffles in an airtight container and refrigerate. Before serving, allow them to rest at room temperature for 10 minutes to enhance texture and flavor.
