Ingredients
- Beef: 500 g (1.1 lbs) beef sirloin or tenderloin cut into thin strips, 1/2 tsp salt, 1/4 tsp black pepper, 1 tbsp all-purpose flour
- Vegetables & Aromatics: 2 tbsp unsalted butter, 1 tbsp olive oil, 1 medium yellow onion finely chopped, 250 g (9 oz) cremini or button mushrooms sliced, 2 cloves garlic minced
- Sauce: 1 tbsp tomato paste, 1 tsp Dijon mustard, 120 ml (1/2 cup) dry white wine or beef broth, 240 ml (1 cup) beef broth, 150 ml (2/3 cup) sour cream at room temperature, 1 tbsp Worcestershire sauce, salt and pepper to taste
- To Serve: 300 g (10 oz) wide egg noodles cooked and drained, 2 tbsp chopped fresh parsley
Instructions
- Step 1:
- Season beef strips with salt and pepper then toss with flour to coat lightly.
- Step 2:
- Heat 1 tbsp butter and olive oil in a large skillet over medium-high heat. Add beef in batches searing quickly (about 1 minute per side) until browned. Remove beef and set aside.
- Step 3:
- Add remaining butter to the skillet. Add onion and cook for 2-3 minutes until softened. Stir in mushrooms and sauté until golden and any released liquid has evaporated about 5-7 minutes.
- Step 4:
- Add garlic and cook for 1 minute. Stir in tomato paste and mustard cook for 1 minute more.
- Step 5:
- Deglaze the pan with white wine (or beef broth) scraping up browned bits. Simmer for 2 minutes then add beef broth and Worcestershire sauce. Bring to a gentle simmer and reduce by half about 5 minutes.
- Step 6:
- Lower the heat. Stir in sour cream until smooth (do not boil). Return beef to pan including juices and warm through for 2-3 minutes. Season with salt and pepper to taste.
- Step 7:
- Serve Stroganoff over cooked egg noodles. Garnish with chopped parsley.
