- Cucumber Sandwiches: 8 slices soft white bread crusts removed, 4 tbsp unsalted butter softened, 1/2 English cucumber thinly sliced, Pinch of salt, Freshly ground black pepper
- Smoked Salmon & Cream Cheese Sandwiches: 8 slices pumpernickel or whole wheat bread crusts removed, 4 tbsp cream cheese softened, 100 g smoked salmon, 1 tbsp fresh dill chopped, 1 tsp lemon juice
- Egg & Watercress Sandwiches: 8 slices soft whole grain bread crusts removed, 4 large eggs hard-boiled peeled, 3 tbsp mayonnaise, 1 tsp Dijon mustard, Salt and pepper to taste, 1 small bunch watercress trimmed
Instructions
- Prepare the cucumber sandwiches:
- Spread butter evenly on each slice of white bread. Layer cucumber slices over 4 slices season lightly with salt and pepper and top with remaining bread. Cut each sandwich into 3 neat fingers.
- Prepare the smoked salmon sandwiches:
- Spread cream cheese on each slice of pumpernickel or whole wheat bread. Layer smoked salmon over 4 slices sprinkle with dill and a touch of lemon juice. Top with remaining bread and cut into 3 fingers each.
- Prepare the egg & watercress sandwiches:
- Mash eggs with mayonnaise mustard salt and pepper until smooth but textured. Spread egg mixture over 4 slices of whole grain bread. Top with watercress add the other bread slices and cut into 3 fingers each.
- Arrange all sandwich fingers:
- Arrange all sandwich fingers on a tiered platter or serving tray for a festive presentation.
