Instructions

Pat the chicken thighs dry with paper towels Rub with the remaining olive oil salt pepper and garlic Sprinkle with the remaining herbs and lemon zest.
Assemble:
Arrange the chicken thighs skin-side up on top of the vegetables Drizzle with lemon juice.
Roast:
Roast in the preheated oven for 40 45 minutes or until the chicken is golden and cooked through (internal temperature should reach 165°F/74°C) and vegetables are tender.
Broil:
